Ingredients

  • 1 1/2 cups all -purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sal t
  • 1/3 cup vegetable oil
  • 1 large eg g
  • 1/3 cup whole milk
  • 1 cup peeled and finely diced Granny Smith apples

Instructions

  • Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin or line with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate measuring cup, combine the vegetable oil, egg, and milk.
  • Pour the liquid ingredients into the dry ingredients and stir with a spatula until just combined.
  • Gently fold the diced apples into the batter.
  • Divide the batter evenly among the 12 muffin cups.
  • Bake for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Transfer the muffins to a wire rack to cool completely.
