Birthday Cake Protein Bars

Ingredients

  • 1.5 cups vanilla whey protein powder
  • 0.5 cup coconut flour
  • 0.5 cup smooth cashew butter
  • 0.33 cup honey or maple syrup
  • 0.25 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 0.25 tsp almond extract
  • 0.25 tsp sal t
  • 3 tbsp rainbow sprinkles
  • 2 tbsp white chocolate chips, melted

Instructions

  • Line an 8x4 inch loaf pan with parchment paper, leaving an overhang on the sides.
  • In a large mixing bowl, whisk together the vanilla protein powder, coconut flour, and salt until well combined.
  • Add the cashew butter, honey, vanilla extract, and almond extract to the dry mixture.
  • Stir the mixture while gradually adding almond milk one tablespoon at a time until a thick, pliable dough forms.
  • Fold in 2 tablespoons of the rainbow sprinkles.
  • Transfer the dough to the prepared pan and press down firmly using a spatula to create an even layer.
  • Drizzle the melted white chocolate over the top and immediately top with the remaining 1 tablespoon of sprinkles.
  • Place the pan in the refrigerator for at least 30 minutes to allow the bars to firm up.
  • Lift the parchment paper out of the pan and slice the block into 8 equal bars.
