In a microwave-safe bowl or small saucepan, heat the heavy cream until it begins to simmer.
Pour the hot cream over the chocolate chips and let sit for 5 minutes, then whisk until a smooth ganache forms.
Pour the chocolate ganache over the strawberry layer and spread to the edges.
Refrigerate for at least 4 hours, or until the filling and ganache are completely set, before slicing into bars.
