Ingredients

  • 16.5 oz refrigerated sugar cookie dough
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 2 whole kiwis , peeled and sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup mandarin orange segments
  • 2 tablespoons apricot preserves, melted for glazing

Instructions

  • Preheat oven to 350°F (175°C).
  • Press the sugar cookie dough into a 12-inch circular pizza pan to form an even layer.
  • Bake for 10-12 minutes until the edges are lightly golden brown.
  • Remove from oven and allow the cookie crust to cool completely on a wire rack.
  • In a medium bowl, beat together the cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled cookie crust, leaving a small border at the edge.
  • Arrange the sliced fruit in concentric circles or a decorative pattern on top of the frosting.
  • Lightly brush the fruit with melted apricot preserves for a glossy finish if desired.
  • Chill in the refrigerator for at least 30 minutes before slicing and serving.
