Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper or use a silicone baking mat and set aside.
In a medium mixing bowl whisk the eggs and vanilla until combined, then add the vegetable oil and whisk again until smooth.
Pour the red velvet cake mix into the egg mixture. Using a wooden spoon or rubber spatula, stir until a thick, uniform dough forms — it will be firmer than typical cookie batter.
Cover the bowl and refrigerate the dough for 10–15 minutes. Chilling firms the dough slightly so the cookies hold a soft, rounded shape while baking.
Place the powdered sugar in a shallow bowl. Using a 1-tablespoon cookie scoop or two spoons, portion the dough into rounded balls (about 1 to 1 1/4 tablespoons each). Roll each ball in the powdered sugar to coat completely and arrange on the prepared sheets, leaving about 2 inches between cookies.
Lightly press the tops of the dough balls with your fingers so they are slightly flattened — this helps them bake evenly and creates that classic crackled surface.
Bake one sheet at a time on the middle rack for 9–11 minutes, until the edges are set and just beginning to darken but centers remain soft. Rotate the pan front-to-back halfway through baking for even color.
Remove cookies from the oven and let them cool on the baking sheet for 4–5 minutes to finish setting, then transfer to a wire rack to cool completely. If desired, dust with a little more powdered sugar before serving.
