Easiest Vegan Pumpkin Brownies

Ingredients

  • 1 cup all -purpose flour
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated cane sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegan semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, whisk together the pumpkin puree, granulated sugar, and vanilla extract until the sugar has partially dissolved.
  • Sift the flour, cocoa powder, baking powder, and salt directly into the wet ingredients.
  • Stir with a spatula until the batter is just combined; do not overmix.
  • Fold in the vegan chocolate chips.
  • Transfer the batter to the prepared pan and smooth the top with a spatula.
  • Bake for 25 to 30 minutes until the edges are firm and a toothpick inserted into the center comes out with only a few moist crumbs.
  • Remove from the oven and allow to cool completely in the pan for at least 30 minutes to ensure the structure sets before slicing.
