Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a medium bowl, combine flour, baking soda, and salt.
Gradually blend the dry ingredients into the butter mixture until fully incorporated.
Fold in the chocolate chips and 3/4 cup of the pastel chocolate eggs.
Drop rounded tablespoons of dough onto the prepared baking sheets, spaced 2 inches apart.
Press the remaining chocolate eggs onto the tops of the cookie dough balls.
Bake for 9 to 11 minutes until the edges are lightly browned.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
