Preheat your oven to 350°F (175°C) and line an 8x8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a small mixing bowl, prepare the peanut butter filling by stirring together the peanut butter, 2 tablespoons of maple syrup, and coconut flour until it forms a thick, dough-like consistency. Set aside.
In a large mixing bowl, whisk together the melted coconut oil, 1/2 cup maple syrup, coconut sugar, eggs, and vanilla extract until smooth and well combined.
Sift the almond flour, cocoa powder, sea salt, and baking soda into the wet ingredients. Stir with a spatula until just combined, ensuring no large clumps of flour remain.
Fold in the dairy-free chocolate chips.
Spread approximately two-thirds of the brownie batter into the bottom of the prepared baking pan, smoothing it into an even layer.
Take the peanut butter filling and flatten small portions between your palms to create disks, then place them across the batter until the surface is mostly covered.
Dollop the remaining brownie batter over the peanut butter layer and gently spread to cover the filling.
Bake for 26 to 28 minutes, or until the edges are set and a toothpick inserted into the chocolate portion comes out with just a few moist crumbs.
Allow the brownies to cool completely in the pan for at least 1 hour before slicing. For the cleanest cuts, refrigerate for 30 minutes prior to serving.
