Iced Almond Flour Orange Cookies

Ingredients

  • 2 cups blanched almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup pure maple syrup
  • 1 tablespoon fresh orange zest
  • 1 tablespoon fresh orange juice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon fresh orange juice (for glaze)
  • 1/2 teaspoon fresh orange zest (for glaze)

Instructions

  • Preheat oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • In a medium bowl, whisk together the almond flour, baking soda, and sea salt.
  • In a separate large bowl, combine the melted coconut oil, maple syrup, orange zest, orange juice, and vanilla extract.
  • Add the dry ingredients to the wet ingredients and stir until a cohesive dough forms.
  • Scoop rounded tablespoons of dough and roll into balls, placing them 2 inches apart on the prepared baking sheet.
  • Gently flatten each ball with the palm of your hand to about 1/2-inch thickness.
  • Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  • Remove from the oven and let the cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Whisk together the powdered sugar, additional orange juice, and orange zest in a small bowl to create a smooth glaze.
  • Drizzle the glaze over the cooled cookies and allow it to set for 15 minutes before serving.
