Peanut Butter Oatmeal Balls

Ingredients

  • 2 cups old -fashioned rolled oats
  • 1 cup creamy natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup semi -sweet mini chocolate chips
  • 1/4 cup ground flaxseeds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Instructions

  • In a large mixing bowl, combine the oats, peanut butter, honey, chocolate chips, flaxseeds, vanilla extract, and salt.
  • Stir the mixture with a heavy-duty spatula until all dry ingredients are fully incorporated and the mixture is cohesive.
  • Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the oats to hydrate and the mixture to set.
  • Using a 1-tablespoon cookie scoop or measuring spoon, portion the chilled mixture into 12 equal segments.
  • Roll each portion between the palms of your hands to form a firm, 1-inch diameter sphere.
  • Place the balls in a single layer in an airtight container and store in the refrigerator for up to one week.
