Soft and Chewy Oatmeal Raisin Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs , room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all -purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3 cups old -fashioned rolled oats
  • 1 cup raisin s

Instructions

  • Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  • In a large bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar until light and fluffy, approximately 3 minutes.
  • Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In a separate medium bowl, whisk together flour, cinnamon, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the rolled oats and raisins by hand until evenly distributed through the dough.
  • Drop rounded tablespoons of dough 2 inches apart onto the prepared baking sheets.
  • Bake for 10 to 12 minutes until the edges are golden brown but the centers still look slightly underbaked.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
