Healthy Pumpkin Bars

Ingredients

  • 15 oz canned pumpkin puree
  • 2 large egg s
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups oat flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8x8 inch square baking pan.
  • In a large mixing bowl, whisk together the pumpkin puree, eggs, maple syrup, melted coconut oil, and vanilla extract until homogenous.
  • In a separate medium bowl, sift together the oat flour, pumpkin pie spice, baking soda, and sea salt.
  • Incorporate the dry ingredients into the wet mixture using a spatula, folding until no dry streaks remain.
  • Gently fold in the dark chocolate chips.
  • Transfer the batter into the prepared baking pan and smooth the surface with a spatula.
  • Bake for 25 to 28 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from oven and let the bars cool completely in the pan on a wire rack for at least 30 minutes before slicing into 12 bars.
